One Of My Favorite Things

Caramelized Onions In my previous post I stated that I used caramelized onions but didn't list a recipe. A few have asked me for it so here it goes! I love these little sweet things. To me they are like bacon. They make almost everything taste better! Have you ever tried them on a chopped bbq sandwich? Oh. My. Gosh! Devilishly good! Caramelized Onions- My own recipe :-) Ingredients 2 tablespoons unsalted butter - real, sweet creamed butter! 2 medium yellow onions -halved and thinly sliced  Salt Fresh ground pepper Instructions Melt butter in a heavy saucepan on medium-low heat until foamy Add the onions, and let them cook, stirring rarely, until they are deep golden brown and caramelized, about 45 minutes. Season well with salt and pepper, remove from the pan, and let cool. Easy Peasy!!! Enjoy! RoJo

Season's Eatings!

Wishing you and your family a Happy Holiday Season (again)! Hi folks! I hope this post reaches you in the best of health and spirits! How have your holidays been so far? What have you been eating? I'm dying to know! Seriously I am! I, myself, --like who else could I be...anywho LOL! Have been smelling all kinds of wonderful food and have not been able to eat much. I think my senses are on overload so that I can't over-indulge but I am not mad at that! We decided not to have a traditional Christmas dinner because we had just eaten all of that stuff for Thanksgiving. So it was last minute and very sporadic...and not at all cohesive, but everyone seemed to enjoy it! I can't tell you what all we had because honestly I don't remember. On my plate was buffalo chicken dip, wontons, tomato pie and chicken and potato casserole. The latter two are dishes I found on Pinterest and will share the recipes with you. Moving Madness!

Hey guys! I just wanted to do a quick check-in to say HAAAAYYYYY! I miss you! I'm happy that the holidays are here and I will have a couple of days off soon to catch my breath. If I haven't said it before, allow me to say it now...I'm NEVER moving again! Unless I'm making major money or my job pays for the packing, moving and unpacking, I'm staying put! I have never been so exhausted in my life! My mom, the slave driver, came over to unpack the kitchen yesterday. Thank God for her, but she wore me out! By the time she left I was wishing my bedroom was on the main floor! All that up and down the stairs...WOOOOOOO!!!! But the kitchen is completely unpacked and almost resembles a real kitchen :). So for that I am grateful. I also learned that probably 80% of the boxes were full of KITCHEN CRAP!!! This new kitchen is so much bigger than my old kitchen but you wouldn't know it because I'm already bursting at the seams. Good thing I already have all I need for
