A Tasty Little Surprise

You ever have one of those days where you absolutely do not want to cook? You've been working all day and you don't need to spend money eating out but your body just doesn't want to cooperate in the kitchen? I have been having a lot of those days lately! Quick fix meals have been my go-to. And no I'm not talking Hamburger Helper!

One day right before it was time for me to clock out my stomach growled ferociously. But I had been eating out so much that I absolutely refused to buy food when I had a fully stocked fridge. So I bypassed all restaurants and stores and went home to figure something out for dinner.

Honestly, I salute parents and people that have to ensure that other folks get a meal. I don't know if I could do it every day! I just don't know! And as much as I love cooking, these have been the busiest last few weeks on the work-front. Most days I just want to go home and crash. So hats off to you parents/husbands/wives that do it.

So one of my favorite websites is www.skinnytaste.com I found this site when I had my failed run at Weight Watchers. The food is super tasty and better for you! I searched my fridge and cabinets to see what I had on hand and then searched the database. And what I found was a tasty, simple and satisfying pasta dish that I have made twice since I found it!

I had some variation of all of the ingredients so this made me happy. And I could seriously eat seafood every night...if I could afford to!

This pasta was super easy to make and here are the ingredients:


I didn't have fresh tomatoes or asparagus, but I did have canned and frozen, respectively. I also did not have whole wheat noodles. I used one can and started to drain off the juice then thought twice about it. Don't drain off the juice if you use canned tomatoes! My mom had bought me some shrimp that I assumed was peeled and deveined, but it wasn't. So cleaning the shrimp was the most difficult aspect of this dish. Oh and the fact that not many people just have herbs de Provence on hand...but of course I did! It was more likely that I wouldn't have garlic LOL.

The portion size is huge and filling and did I mention TASTY?! OK, OK I've kept you waiting long enough, here is the recipe!

Angel Hair with Shrimp and Asparagus 
Gina's Weight Watcher Recipes
Servings: 4 • Serving Size: 1 1/2 cups • Old Points: 7 pts • Points+: 9 pts
Calories: 378.4 • Fat: 6.8 g • Carbs: 52.1 g • Fiber: 8.5 g • Protein: 31.6 g  


  • 1 bunch asparagus, tough ends removed, quartered
  • 1 tbsp olive oil
  • 6-8 ripe plum tomatoes, diced
  • 2 cloves garlic, thinly sliced
  • 12 oz large shrimp, peeled and deviened
  • 1/2 cup fat free chicken broth
  • 2 oz white wine
  • salt and fresh pepper
  • 1/2 tsp herbs de Provence (or you can use your favorite herbs)
  • 1/2 tsp red pepper flakes (gives it a little kick)
  • 8 oz angel hair pasta, high fiber or low carb

Heat a large skillet on high heat. Season shrimp with salt and pepper. When skillet is hot, spray with oil and add shrimp. Cook shrimp about 2 minutes in each side until almost cooked through and remove from the pan. Set aside.


Reduce skillet heat to medium, add olive oil and garlic and sauté until golden, careful not to burn. Add tomatoes and season with salt and pepper. Simmer about 4 minutes.Add white wine and broth and stir. Add asparagus, salt, pepper and herbs. Cover and simmer for 10 minutes on medium low heat.


While sauce is simmering, boil salted water and cook pasta until desired tenderness.Drain when done.


After sauce simmers 10 minutes, add shrimp to sauce to finish cooking, about 1 minutes (Do not overcook or shrimp will get tough). Add pasta to the sauce and tosswell. Divide equally in 4 bowls and top with a good grated cheese.

Holiday Party Etiquette

With the holidays coming up on us so fast, it’s only right that we talk party etiquette. I can only speak about Black party etiquette, so that’s what I will discuss here. I'm sure some of these rule can be applied across different cultures/ethnicities.




If you are invited to a party, gathering, dinner, or the like, there are some things that you just don’t do. If we invited you, we must like you at least a little bit. That can end quickly. Here are some general rules of Black house gatherings that expand beyond the holidays. You’re welcome.

Don’t assume all Black events start late. Yes…a lot of them do, but you don’t want to be the late one. If I tell you it starts at 3, I’ve most likely accounted for the lateness of my family members. We move on without them. Don’t be tardy for the party. Don’t show up empty handed. Even if you are told not to worry about bringing anything, bring something. Even if it’s a bottle of sparkling cider. There will be massive side eye if you show up empty…

Dial Baby & Kids (Giveaway)

Let me start by saying that the toddler years are fun...and a true test of faith and patience LOL! I love my little tot with everything I have in me. But every day she tests my limits in way I didn't even know were possible. I mostly laugh.

She is a very spirited little girl who LOVES to be outside. I mean she will cry to go outside and sometimes all she wants to do is climb in a chair and sit on the porch and watch the cars go by. On this particular day though...(Jesus be a fence) she wanted to chase lizards, pop bubbles, shred leaves, kick her ball in the sticker bushes and throw a flower pot off the deck to see how far she could get it to go. Maybe softball is in her future, who knows LOL. That said ball ended up bursting from being repeatedly kicked in the sticker bushes...



After our world wind backyard excursion, we go inside to have a snack and settle down a bit. Luckily she likes to wash her hands. I mean, she almost had that lizard!
